中国营养学会于1997年4月制定的《中国居民膳食指南》中,提倡多吃豆类及其制品。这是优化膳食结构,促进人民健康的重要措施之一。豆类,特别是大豆,含有丰富的蛋白质,100克大豆里含蛋白质约40克,也就是说,500克大豆所含的蛋白质相当于1000克瘦牛肉、2250克猪肉中蛋白质含量。其氨基酸组成,除蛋氨酸稍低外,氨基酸与奶、蛋相似。故公认是优质蛋白质的主要来源。特别是与谷、蛋、肉等混合食用,充分发挥蛋白质间的互补作用,更能增加营养价值。无怪乎人们常对大豆冠以“植物肉”、“绿色乳牛”等美称。
Chinese Nutrition Society in April 1997 developed the “dietary guidelines for Chinese residents”, advocating eat more beans and their products.
