(一)肿瘤研究 1.食管癌研究 1)应用GC/TEA系统地分析了林县、辉县食物(10种,231份样品)中的亚硝胺。检测出7种挥发性亚硝胺,平均含量为0.1~15.5μg/kg。检测的结果表明,林县原粮中亚硝胺含量高,与运、存过程中受真菌污染有关。某些真菌不仅能将硝酸盐还原为亚硝胺,还能增加二级胺的含量。新发现的亚硝胺MAMBNA、MAMPNA可自然存在于某些食物中,对细菌和哺乳类细胞均有致突变作用。 2)对林县人尿1,000多人份与胃液300
(I) Tumor research 1. Esophageal cancer research 1) The nitrosamines in Linxian and Huixian foods (10, 231 samples) were systematically analyzed using GC/TEA. Seven kinds of volatile nitrosamines were detected with an average content of 0.1 to 15.5 μg/kg. The test results showed that the high level of nitrosamines in Linxian raw grain was related to fungal contamination during transport and storage. Some fungi can not only reduce nitrates to nitrosamines but also increase the level of secondary amines.
