鲥鱼Macrura reevesii(Rich),属鲱形目鲱科鲥属,因每年定时由海入江繁殖得名。它以体色银白,肉嫩味美,营养丰富而驰名中外,其含脂肪量高达18—27.7%。鲥鱼是我国名贵经济鱼类之一,李时珍《本草纲目》中记述:“鲥鱼,性甘平,无毒,补虚劳……”其油可“涂烫火伤”。当代著名作家郭沫若在尝过鲥鱼之后称道“鲥鱼赐鲜有余香……”可见,鲥鱼不但是筵席上的美味佳肴,也是一味健体治伤的良药。
