近几年来,全国各地常见因使用有毒蔬菜而发生中毒事故的报道。蔬菜污染已成为一个越来越突出的社会性问题,污染源主要来自农药、重金属、硝酸盐和各种有害生物(如有害微生物、寄生虫卵等)。我国绿色蔬菜(即无公害蔬菜)的研究和生产已提出了近20年,许多研究领域和生产推广工作都取得令人瞩目的成绩。但在很多地方,无公害蔬菜的生产只限于少量的温室无土栽培,而普通入在农贸市场上购买蔬菜(如豇豆)还是以传统方法生产出来的为主,农药等有毒、有害物污染还十分严重。
