利用米饭食味计测定米饭食味以研究北方粳稻食味与品质性状的关系。结果表明:香气与硬度呈极显著正相关,与平衡度呈极显著负相关,与弹性呈显著负相关;光泽与平衡度呈显著负相关;综合评定分数与硬度呈极显著负相关,与平衡度呈极显著正相关;香气与整精米率呈显著负相关,食味特性与其他外观品质无显著相关关系。
Rice meal taste meter was used to measure the taste of rice to study the relationship between taste and quality traits of northern japonica rice. The results showed that there was a significant positive correlation between aroma and hardness, a significant negative correlation with balance, a negative correlation with elasticity, a negative correlation between gloss and balance, a negative correlation between comprehensive score and hardness, There was a significant positive correlation between the aroma and the rate of milled rice. There was no significant correlation between the taste characteristics and other appearance qualities.
