目的对零售的米饭中蜡样芽孢杆菌污染情况进行调查。方法 GB/T4789.14-2003《食品卫生微生物学检验蜡样芽孢杆菌检验》。结果 30份零售米饭中检出19份蜡样芽孢杆菌阳性,其中有11份样品蜡样芽孢杆菌计数>106(CFU/g)。结论做好食品的冷藏和加热,搞好环境卫生,保持食品经营场所整洁卫生,做好个人卫生,卫生监管部门应加强食品零售摊位食品卫生的监管力度,确保人民群众的饮食安全。
Objective To investigate the contamination of Bacillus cereus in retail rice. Methods GB / T4789.14-2003 “Microbiological examination of food hygiene Bacillus cereus test.” Results Nineteen samples of Bacillus cereus were detected in 30 samples of retail rice, of which 11 samples had Bacillus cereus count> 106 (CFU / g). Conclusion Good food refrigeration and heating, improve environmental hygiene, keep food premises clean and hygienic, good personal hygiene, health regulatory departments should strengthen supervision of food hygiene retail food stalls to ensure that people’s diet safety.
