目的了解广州市中小型餐饮单位副溶血性弧菌污染情况,比较中小餐饮单位熟肉制品和水产品中副溶血性弧菌的检出情况,初步评价中小型餐饮单位受副溶血性弧菌交叉污染的可能性。方法在广州市中心城区、城乡结合部和乡镇共60家中小型餐饮单位,每家最少抽取3份熟肉制品、3份鲜活水产品进行副溶血性弧菌的检测。结果鲜活水产品副溶血性弧菌的检出率为38.33%(69/180),明显高于熟肉制品0.00%(0/180)。结论广州市中小型餐饮单位的鲜活水产品受副溶血性弧菌污染严重,但未发现熟肉制品的交叉污染现象。
Objective To understand the situation of Vibrio parahaemolyticus in small and medium catering establishments in Guangzhou and to compare the detection of Vibrio parahaemolyticus in cooked meats and aquatic products in small and medium-sized catering establishments. Results The detection rate of Vibrio parahaemolyticus was 38.33% (69/180), which was significantly higher than 0.00% (0/180) of cooked meat products. Conclusion Fresh aquatic products from small and medium catering establishments in Guangzhou were seriously polluted by Vibrio parahaemolyticus, but no cross-contamination of cooked meat products was found.
