目的了解广西市售面制食品中铝的污染状况,评估居民膳食铝暴露的情况。方法对2009-2013年市售面制食品中铝的残留量进行监测,根据2002年广西居民膳食营养调查中面及其制品的摄入量,结合面制食品中铝含量的检测结果,推算每周铝的摄入量。结果共监测面制食品4 148份,铝的平均含量为157.81 mg/kg,铝超标率为35.29%,不同种类、不同生产来源及不同年份的面制食品中铝含量差异均有统计学意义(P<0.01),油炸食品类超标率最高,为62.57%。居民每周铝摄入量为0.44 mg/kg·bw,比JECFA规定的PTWI 2 mg/kg·bw低。结论部分面制食品中的铝含量超标较严重,居民由面制食品摄入铝的量虽然低于PTWI,但仍需要加强对面制食品的监管,以降低居民膳食铝的摄入量。
Objective To understand the pollution status of aluminum in the commercial noodles in Guangxi and assess the residents’ dietary aluminum exposure.
