徐正才先生是上海烹饪界著名的“海派”大师,曾率领中国代表团参加第17届国际奥林匹克烹饪技术大赛,一举夺得团体金牌。他不但烧得一手好菜,而且对中华饮食文化颇有研究。他的文章,创造性地将京戏的“唱、念、做、打”技巧与烹饪的“色、香、味、形”联系在一起,内容丰富,均味十足,是不可多得的饮食文化随笔。这部《锅合漫笔》汇聚了徐师傅40年来的烹饪观感体会,读来不亚于品尝一顿美味大餐。本文摘自该书序言,显现了徐师傅深厚的饮食文化功底。
Mr. Xu Zhengcai is a famous master of “Shanghai School” in Shanghai’s cooking circle. He led the Chinese delegation to the 17th International Olympic Cooking Technology Competition and won the group gold medal. He not only burned a good hand, but also quite a study of Chinese food culture.
