目的了解市售不锈钢炊具中镍、铁溶出情况是否符合相关卫生标准。方法选择不锈钢锅和不锈钢盆(无明确产地)各一个作为研究对象,用定量4%乙酸溶液加热30 min(煮沸后将温度保持在90℃),并常温浸泡24 h。用丁二酮肟比色法[1]测定水样中的镍,用邻二氮菲比色法[2]测定水样中的铁。结果镍的溶出量为0.428 mg/L,符合相关卫生标准的规定;铁的溶出量为0.24 mg/L,由于国家标准中未作相关规定,因此不便比较。结论本次实验显示所用不锈钢样品在镍、铁的溶出方面符合相关卫生标准。
Objective To understand whether the dissolution of nickel and iron in commercially available stainless steel cookware meets the relevant hygienic standards. Methods One stainless steel pot and one stainless steel pot (no definite place) were selected as research objects. The samples were heated in acetic acid solution of 4% acetic acid for 30 min (the temperature was maintained at 90 ℃ after boiling) and soaked for 24 h at room temperature. Nickel in water samples was assayed by the dimethylglyoxime colorimetric method [1], and iron in water samples was assayed by the phenanthroline colorimetric method [2]. Results The dissolution of nickel was 0.428 mg / L, which accorded with the relevant hygienic standard. The dissolution of iron was 0.24 mg / L, which was inconvenient to compare because of no relevant regulations in national standards. Conclusion This experiment shows that stainless steel samples used in the nickel and iron dissolution in line with the relevant health standards.
