小豆又名赤豆,原产于我国.在农书《齐民要术》中就有小豆耕作方法的记载.我国栽培小豆约有2,000年历史.我国是世界上出产小豆最多的国家,各地几乎都有生产,但以东北各省为多,品质也好.小豆种子内约含蛋白质20%,脂肪2%,炭水化合物55%,富于营养,是食用佳品,经济价值很高,也是深受国际市场欢迎的农产品.我省所产的小豆,主要为赤小豆(红褐色),也有其他色泽,如白小豆、灰小豆、红白花小豆、黑白花小豆、黧小豆、粳米小豆、(淡绿色)
