建立超高效液相色谱法测定食品中的γ-氨基丁酸的方法。在碱性条件下,利用邻苯二甲醛(OPA)柱前衍生法,采用Waters BEH C18分析柱(2.1 mm×50 mm×1.7μm),0.1 moL/L醋酸钾-甲醇进行洗脱,荧光检测器检测,激发波长:338 nm,发射波长:425 nm,峰面积外标法定量。γ-氨基丁酸检测浓度在0.1~20μg/mL范围内与峰面积积分值呈较好的线性关系,R=0.999 6;针对牛奶,糖果,粳米加样回收率为84.2%~110.5%,RSD=7.51(n=6),最低检测限为0.006μg/mL。本方法简便,准确,重现性好,适用于粳米,功能性添加γ-氨基丁酸的牛奶,糖果检测。
