随着经济的发展,人们生活水平的提高,人们的食品消费观念从传统单一向现代的多样、快捷化转变。食品贸易中冷链的完善程度对食品安全和食品行业的发展起到了至关重要的作用。第三方冷链物流配送是由食品的供应方和需求方以外的物流企业提供冷链物流服务,目前我市食品贸易中大部分采用第三方物流配送模式。本文介绍了国内外冷冻、冷藏食品中冷链的发展现状,指出中国冷冻、冷藏食品中冷链面临的问题,展望了食品冷链发展前景。并对北京市现有第三方冷链物流配送状态进行调查,调查实验分为冻猪肉和冰淇淋两组,以第三方冷链物流配送中的冷藏运输和冷藏储藏、冷藏储藏、冷藏运输的对接这三个环节作为整体研究对象,每组分别进行完全冷链状态和不完全冷链状态下的对比实验,采用 RHLOG-T 型温度自记仪记录整个配送过程的温度变化。根据采集数据对完全冷链和不完全冷链下货物热流量进行计算和对比,并分析完善冷链的必要性。
With economic development, people’s living standards improve, people’s food consumption concepts from the traditional single to the modern diversity, fast change. The perfection of the cold chain in the food trade plays a crucial role in food safety and the development of the food industry. Third-party cold chain logistics and distribution by the food suppliers and demand-side logistics companies to provide cold chain logistics services, the city’s food trade most of the current use of third-party logistics and distribution model. This article introduces the development status of cold chain in frozen and chilled foods both at home and abroad, and points out the problems facing the cold chain in frozen and chilled foods in China, and looks forward to the future development of cold chain foods. And the third-party cold-chain logistics distribution status in Beijing was investigated. The investigation was divided into two groups: frozen pork and ice cream.
