以‘燕昌’板栗为试材,研究了采后NaOCl(500mg·L-1)水浴处理时间(2、3、4和5d)对其在0℃冷藏期间几种酶活性的影响。结果表明:水浴2d处理的板栗淀粉酶活性与对照差异不显著,而水浴4d和5d处理可显著抑制淀粉酶活性。不同时间NaOCl水浴处理对PPO活性均有一定的抑制作用,但以水浴4d和5d处理效果较好。4d和5d水浴处理有利于保持POD的活性。水浴处理有效保持了板栗在贮藏期间的SOD活性,水浴3、4和5d处理贮藏60d时表现出活性高峰,且在贮藏期间与其他处理和对照差异显著。NaOCl水浴处理有利于保持板栗贮藏过程中CAT活性,4d和5d水浴处理的板栗ADH活性总体高于其他处理和对照。总体来说,水浴4d和5d处理对抑制板栗的淀粉酶、PPO活性和提高POD、CAT、SOD和ADH活性有一定效果,从而有利于延缓板栗在贮藏期间的衰老。
The effects of NaOCl (500 mg · L-1) on the activity of several enzymes during storage at 0 ℃ were investigated using ’Yanchang’ chestnut as test material. The results showed that there was no significant difference in the amylase activity of chestnut treated with water for 2 days compared with the control, while the activities of amylase were significantly inhibited by water bath for 4 and 5 days. NaOCl water bath treatment at different times had certain inhibitory effect on the activity of PPO, but treated with water bath for 4d and 5d had a good effect. 4d and 5d water bath treatment is conducive to maintaining POD activity. Water bath treatment effectively maintained the chestnut during storage SOD activity, water bath 3, 4 and 5d showed peak activity after 60 days of storage, and significant differences during storage with other treatments and controls. NaOCl was beneficial to maintain the activity of CAT during chestnut storage. The activities of ADH in chestnut were higher than those of other treatments and controls at 4d and 5d. Generally, the treatment with water bath 4d and 5d had certain effect on inhibiting amylase and PPO activity and increasing POD, CAT, SOD and ADH activity in chestnut, which could delay the senescence of chestnut during storage.
