分析辽宁地区常见杂粮中的元素含量,研究杂粮中元素含量与其种类之间的相关性,以期为杂粮的分类和营养评价提供一种新的方法。采用微波消解处理样品,电感耦合等离子体-质谱法(ICP-M S)测定19种粮食中14种元素的含量,用统计软件(SPSS11.5)进行系统聚类分析。19种粮食均含有丰富的人体所需的元素,聚类分析其相似性较大,分成两大类,与粮食的传统性分类相符。用元素含量作为粮食的特征对粮食进行分类方法是可行的,相关系数较大的作物,其传统分类中的亲缘关系相似性也较大,揭示粮食中元素含量与作物的亲缘关系相关,并从元素含量方面进行营养价值评价,用于指导人们合理膳食,为人体各种元素的获得及保持平衡提供科学依据。
The content of elements in common grains in Liaoning Province was analyzed to study the correlation between the content of elements in grains and their species, and to provide a new method for the classification and nutrition evaluation of grains. The contents of 14 elements in 19 kinds of grain were determined by microwave digestion and inductively coupled plasma-mass spectrometry (ICP-MS), and the data were analyzed by SPSS11.5. 19 kinds of food are rich in human elements needed, cluster analysis of its similarity is larger, divided into two categories, consistent with the traditional classification of food. It is feasible to classify grain using the elemental content as the characteristic of grain. The crop with larger correlation coefficient has similar genetic relationship in the traditional classification, which reveals that the content of grain is related to the genetic relationship of the crop. Elemental content of nutritional value evaluation, to guide people to a reasonable diet for the human body to obtain and maintain a variety of elements provide a scientific basis.
