糖果在人们日常生活中,占有很重要的地位。我国制糖历史悠久,它是古代劳动人民长期积累经验的结果。 蔗糖还未普遍食用时,我国民间吃的主要是饴糖。就是到现在人们普遍食用蔗糖和甜菜糖时,饴糖在食用方面仍然占着一定的重要地位。饴糖的品种可分为稀、稠和干固三种形态。为了便于保存、传递和食用,人们逐渐认识到一种干固体、小颗块的糖是人们乐于接受的形式,这便是淀粉软糖糖果产生的原因。
