蔬菜是人类三大食物(粮食、肉食、蔬菜)构成之一,人们生活离不开它。随生活水平的不断提高,人们对蔬菜要求数量足、品种多、质量好、卫生安全。对于这些要求我国蔬菜生产远不能适应,这给蔬菜科研提出了很多新的课题。一、研究新品种,包括研究适宜罐头加工的新品种。二、研究蔬菜初加工、预冷、运输、储存、速冻、保鲜、分级技术及设备。
Vegetable is one of the three major human food (food, meat, vegetables), people can not live without it. With the continuous improvement of living standards, people require sufficient quantity of vegetables, varieties, good quality, health and safety. For these requirements, our country’s vegetable production is far from being able to adapt, which has raised many new topics for vegetable research. First, research new varieties, including the study of new varieties suitable for canning. Second, research vegetables early processing, pre-cooling, transportation, storage, quick-freezing, preservation, grading technology and equipment.
