目的通过对人红细胞膜反式脂肪酸(TFA)的测定,描述人红细胞膜反式脂肪酸的组成与含量,并分析其影响因素,促进对反式脂肪酸的进一步认识,为保障居民健康提供参考。方法随机选取健康体检人群进行流行病学调查,194人作为调查对象纳入标准,掌握其基本情况、反式脂肪酸的认知情况和反式脂肪酸含量较高食物的近期摄入情况等;应用7890B气相色谱仪对调查对象血液中红细胞膜反式脂肪酸进行检测;运用Excel和SPSS统计软件进行数据分析。结果有效调查对象194人,其中男性119人,女性75人,平均年龄为(43±12.8)岁;居民对反式脂肪酸知晓率为13.9%;人群样本红细胞膜上反-9-十六碳一烯酸平均含量为(1.098±0.318)ppm,反-9-十八碳一烯酸平均含量为(0.775±0.164)ppm,反-9,12-十八碳二烯酸平均含量为(0.861±0.2)ppm。结论居民对反式脂肪酸的认知比较低,性别、文化水平、职业和月收入等是人红细胞膜TFA摄入的影响因素。红细胞膜TFA的含量处于相对稳定的状态,并不会受短期食物摄入改变的影响,但并不排除长期的高含量TFA摄入会对人体内TFA含量产生影响。
Objective To describe the composition and content of trans-fatty acids in human erythrocyte membrane by measuring the trans-fatty acid (TFA) of human erythrocyte membrane and to analyze its influencing factors so as to promote the further understanding of trans-fatty acids and provide a reference for the protection of residents’ health. Methods A total of 194 people were included in the questionnaire for inclusion in the epidemiological survey. The basic situation, the cognition of trans fatty acid and the recent intake of food with higher trans-fatty acid content were investigated. Chromatograph on the subject’s blood erythrocyte membrane trans fatty acids were detected; the use of Excel and SPSS statistical software for data analysis. Results A total of 194 valid subjects were investigated, including 119 males and 75 females, with an average age of (43 ± 12.8) years old. The residents’ awareness of trans fatty acids was 13.9% (1.098 ± 0.318) ppm, the average content of trans-9-octadecadienoic acid was (0.775 ± 0.164) ppm and the average content of trans-9,12-octadecadienoic acid was (0.861 ± 0.2) ppm. Conclusions Residents have relatively low cognition of trans fatty acid, and gender, cultural level, occupation and monthly income are the influencing factors of TFA uptake by human erythrocyte membranes. The content of TFA in the erythrocyte membrane is relatively stable and will not be affected by short-term changes in food intake. However, it does not exclude that long-term high TFA intake will have an impact on TFA content in the human body.
