就苹果中多酚氧化酶和半乳糖醛酸酶在贮藏过程中活性变化与同期果实硬度的关系进行了研究 ,旨在寻求一种新的检测苹果贮藏效果和预测贮藏期的方法。研究表明酶的活性与果实硬度呈正相关 ,且具有良好的线性关系 ,对控制贮藏条件具有积极的意义。
The relationship between activity change of apple polyphenol oxidase and galacturonase during storage and fruit firmness was studied in order to find a new method to detect the storage effect of apple and to predict the storage period. Studies have shown that enzyme activity and fruit firmness was positively correlated, and has a good linear relationship, to control the storage conditions have a positive meaning.
