Mango (Mangifera indica) and ambarella (Spondias cytherea) are tropical fruits rich in waste materials,with peels representing about 17% of the total fruit weight (Koubala et al.,2003).These peels have been reported to be a potential source of pectins (Berrardini et al.,2005).Using HCI or ammonium oxalate as extractants,mango and arnbarella peels pectins were recovered (yield:20-30%); these pectins are highly methoxylates (HM) (DM 55-78%) and exhibit a high average molar mass (140-480 kDa) and intrinsic viscosity (200-1300 mL/g).
