Salt (sodium chloride) has been prominently featured in the news for many years because of the purported link between its consumption and cardiovascular disease.This multi-decade long debate has been characterized by considerable misinformation,which,in turn has led to a loss of perspective on the part of consumers and in certain cases on the part ofregulators.In the last few years,the salt content of foods and has taken on a much greater profile because of three highly publicized initiatives.The Food Standards Agency (FSA) of the UK has instituted a highly aggressive anti-salt campaign directed at the food industry.
