Training food industry workers in Sub-Saharan Africa has been identified as a key component in addressing the issue of food safety in Africa.The IUFoST Distance Education Task Force has begun development of a series of instruction modules in nine key subject areas pertaining to Food Science.These modules are aimed at providing information and resources necessary to improve the safety,quality,and reliability of the Sub-Saharan Africa food supply."Food Dehydration and Drying" was selected as the subject area for developing a series of training modules at the introductory,intermediate,and advanced levels.
