Viscosity and gelling properties of gum in seed of Nicandra physaloides (L.) Gaerm were studied by using small and large deformation experiments in this paper.Gelation of gum was a dynamic course,which included rapid formation of gel network and slow growth of gel network.The gelling point and melting point of gum were investigated with AR1000 rheometer,and the gel strength of gum was detected with TA texture testing instrument.
