The effect of electron beam (e-beam) irradiation at doses of 2, 4 and 6 kGy on the biochemical properties of proteins, amino acid composition and texture of Sciaenops oeellatus muscle during iced storage were studied.On the irradiation day, the contents of salt-soluble protein and total sulfhydryl (SH), Ca2+-ATPase and Mg2+-EGTA-ATPase activities of actomyosin in irradiated S.ocellatus showed obvious reduction, which was probably related to the structural changes in actomyosin.However, these indexs of biochemical properties in the irradiated groups had a more stable decreasing tendency during the storage period of 24-days at 0℃.Radiation dose (2-6 kGy) had no significant influenee on the contents and quality of amino acids, and hardly alter the inter texture of muscle.Our results indicate that e-beam irradiation at doses of 2-6 kGy cooperate with low temperature is a proper way for extending the shelf life of S.ocellatus.
