The traditional Korean diet is characterized by high consumption of plant food,which is high in grains and vegetables.On the other hand,fruits were not usually consumed by Koreans at regular meals.Although Koreans vegetable consumption is conside-red to be high,there have been some concerns about Koreans pattern of vegetable consumption due to high consumption of salted and picked vegetables.Kimchi,the most popular Korean vegetable dish,is made with salted Chinese cabbage and diverse condiments,such as hot pepper,garlic,scallions,ginger and other ingredients.
