Objective To understand the changes of dietary structure in Linzhou residents and analyze the relationship with the prevalence of esophageal cancer morbidity and mortality. Methods Dynamic changes in the incidence and mortality of esophageal cancer and dynamic changes in dietary structure were compared; the results were nearly 20 years old. Linzhou residents’ staple foods, non-staple foods, vegetables, and fruits, especially in the younger age groups, have significantly improved. In the past 10 years, the incidence and mortality of residents with esophageal cancer have both shown a downward trend, and they have also been significantly lower in the younger age groups. Conclusion The study suggests that the decline in the incidence and mortality of esophageal cancer in Linzhou is closely related to the improvement of the dietary structure and nutritional status of residents.
