论述了中国传统食品面临的挑战和机遇。中华食品文化历史悠久、内涵丰富,近年却受到西餐和国外食品技术的挑战,许多传统的食品濒临失传。这主要是因为忽视了对传统食品科学化、系统化的整理和认识。振兴中华食品要重视文化背景研究,注意吸收西方食品文化优秀成果,加强营养学指导。
Discusses the challenges and opportunities that traditional Chinese food is facing. Chinese food culture has a long history and rich connotation. In recent years, it has been challenged by western food and foreign food technologies. Many traditional foods are on the verge of disappearance. This is mainly because of ignoring the scientific and systematic sorting and understanding of traditional foods. The revitalization of Chinese food should pay attention to the research of cultural background, pay attention to absorbing the outstanding achievements of western food culture and strengthen the guidance of nutrition.
