The objective of this study was to investigate the differently expressed proteins in the Rib Eye Muscle proteome between two breeds of different intramuscular fat deposition ability in their late fatting stage.HeiMao Cattle which has more intramuscular fat and Chinese Red Steppes which has more intramuscular fat were selected randomly and bred in rearing environment. All of 28 differently expressed proteins were identified as 20 proteins by using 2-Dimensional Fluorescence difference gel electrophoresis with Mass Spectrometry Technology and validated by Western blot and Quantitative Real-time RT-PCR analyses.Among all these proteins,7 proteins were more expressedin HeiMao Cattle while 12 proteins was more expressed in Chinese Red Steppes except HSP27.All identified proteins relate to Reproduction, Death besides Energy Metabolism, Defense and Stress, Growth and some other common pathway. There were also some differently expressed proteins about reactive oxygen species in this stage. Thus our data suggested that fat deposition may be effected by some reactive oxygen species proteins (MSRA and TXN) in late fat deposition stage of cattle.
