In order to find the appropriate artificial diet to replace the trash fish,effects of replacement of trash fish with formulated diets and mixed diets on free amino acids,tasty nucleotides and taste profiles in different parts of female Portunus trituberculatus were investigated in this study.The result indicated that the content of IMP and AMP in the abdominal meat of mixed diets treatment was significantly higher than that of trash fish treatment (p<0.05),increased by 17.04% and 29.67% respectively.And it could reach the level of trash fish treatment in gonads and hepatopancreas.There was no significant difference in the total amount of free amino acids and the content of essential amino acid in the gonad of mixed diets treatment.The total amount of free amino acids in the abdominal meat had no significant difference with the mixed diets treatment (p>0.05),but better than it in terms of flavor.The contents of flee amino acids in the hepatopancreas were significantly influenced by different feeding.The total free amino acid content was highest in the mixed feed group,which was 3493.48 mg/100g.Electronic tongue data showed that different diets for female Portunus trituberculatus will have an impact on the overall taste profile.It had a relatively large influence on the gonads and hepatopancreas.Overall,considering the cost and taste,the mixed diets could be used to replace the trash fish.
