The leaves of premna microphella were steamed by transient high-pressed steam,dried,grinded,and its powder was mixed in water,the pH of the filtered supematant was adjusted to 6.2,and then shaped curd with faint scent was made to be directly edible.If glucuronolactone in differen concentration was added in the filtrate,the curd was in different color.After the leaf curd was dissolved by (NH4)2C2O4,the dissolved substance was proved to be pectins,which main component is galacturonic acid,by organic solvent precipitation,carbazole colorimetry and extinction coefficient tests.It was deduced that the mechanism of making curd of Prernna microphylla leaves lies in the agglutination of pectin and protein is just the filling in the net of pectin.And animal feeding experiments indicated that this kind of curd is few poisonous and has an effect on promoting growth,strengthening resistance and restraining the accumulation of fat,which make it a good prospect on developing new natural food.
