Abstracts:Rigor mortis development of the dorsal muscle of New Zealand White Rabbit (Orycpolagus cuniculus) was studied by two newly developed instrumental analysis techniques,postmortem muscle shortening was measured by muscle thermal rigorometer (MTRM) and muscle penetration force and deformation at break were determined by Food Texture Meter during postmortem aging at 20℃.Furthermore,changes of the rigor indices determined by newly methods were compared with those obtained by traditional methods.
