世界上有各种饮食文化的存在,饮食工具也自然承载着不同民族不同国家的文化要素。中国、日本、朝鲜半岛和越南等同属于“箸食”文化地区,但箸的使用方法和箸的形状不完全相同。本文着重记述日本文化里作为餐具的筷子的历史、类别和作为文化符号的筷子,勾陈“和食文化”里不可或缺的重要存在然而不大为外人注意的角落,依据历史文献,展示从中国传去的箸如何在日本的餐桌上发展变化,其历史及流变的细节以及在今日社会里的全貌。筷箸不但是和食文化的一部分,也是今日日本社会的一个产业,同时还是一个儿童和青少年教育的课目。希望以这些文献和现代资料,提供发展、复兴我国的筷箸传统和筷箸产业以及筷箸教育之参考。
