It has been reported that various types of hydrocarbon glycosides, aromatic glycosides, monoterpene glycosides, saccharin and nucleosides have been isolated from the water-soluble fraction of the fruit of fennel (Foeniculum vulgare). This time, we continue to report the separation of new water-soluble fractions from fennel. Dihydrochromoside and phenethyl glycoside, an optically active isomeric mixture of Su-epoxy anethole was isolated from the ether soluble fraction. Anise (2.0kg) was extracted with methanol, and the extracts were successively distributed in ether-water, ethyl acetate-water.
