人类为了生存,一直关注着减少食物腐烂的途径,经过八个世纪的探索,找到了盐腌、糖渍、醋渍及发酵等防腐方法。可是随着社会的发展、生活水平的提高,现代人对食品有了更高层次的要求,希望常年都能吃到新鲜的食品。所以,近年来食品保鲜贮藏迅速发展,若干化学品应用到食品工业中来。为了食品长期储存、长途运输的需要,人们对食品防菌、防霉采取了更为有效的措施。
