目的了解如皋市幼儿园食堂卫生安全现状,为制定相应的管理对策及监督执法提供指导依据。方法对全市59所幼儿园进行现场调查、监测。结果餐饮许可证持证率为100%,从业人员健康证持证率为91.3%。餐(饮)具检测合格率农村幼儿园较城镇低,小型幼儿园检测合格率较大中型低,差异有统计学意义(χ2=5.36,P<0.05;χ2=24.44,P<0.01)。食品从业人员食品安全知识抽查合格率不高,仅为78.0%,特别是农村幼儿园(72.0%)低于城镇(90.0%)的合格率。结论幼托机构食堂卫生管理存在隐患,部分食堂卫生设施不完善,使用率不高,应全面加大对幼儿园食堂的监管,确保幼儿食品安全。
Objective To understand the status quo of health and safety of kindergartens canteens in Rugao and to provide guidance for formulating appropriate management countermeasures and supervision and law enforcement. Methods 59 kindergartens in the city were investigated on site and monitored. Results The permit rate for catering was 100%, and the rate of health certificate for practitioners was 91.3%. The test pass rate of meal (drink) was lower in rural kindergartens than that in urban areas, and the passing rate of small kindergartens was lower than that of medium and small ones (χ2 = 5.36, P <0.05; χ2 = 24.44, P <0.01). The passing rate of food safety knowledge of food practitioners is not high, only 78.0%, especially that of rural kindergartens (72.0%) is lower than that of towns (90.0%). Conclusion There are some hidden dangers in the hygiene management of canteens in kindergartens. Some of the canteen sanitation facilities are not perfect and the utilization rate is not high. Therefore, the supervision of canteen in kindergartens should be comprehensively strengthened to ensure the safety of children’s food.
