用 ICP-AES 法测定南京市58种常用食物铝含量。结果发现,各种食物铝含量差别较大。根据居民食物结构推算南京市居民每日铝摄入量为8.98 mg;实测40名成年人铝的实际摄入量为(25.21±12.82)mg。分析表明,通过天然食物所摄入铝量较低,含铝食品添加剂的面制食品是人群膳食铝的最主要来源。测定男、女性发铝含量,分别为(19.28±10.24)和(25.97±14.49)μg/g。
Determination of aluminum in 58 commonly used foods in Nanjing by ICP-AES. The results showed that a large difference in the content of various foods aluminum. The daily intake of aluminum in Nanjing residents was 8.98 mg based on the food structure of residents. The actual intake of aluminum for 40 adults was (25.21 ± 12.82) mg. The analysis shows that the most important source of dietary aluminum for the population is the noodles made from aluminum-containing food additives, which have low levels of aluminum intake through natural foods. Determination of male and female hair aluminum content, respectively (19.28 ± 10.24) and (25.97 ± 14.49) μg / g.
