本文通过对812件炊厨、餐食具等污染原因的调查,发现炊厨、餐食具和不同食堂熟食抹布污染情况严重。分析其原因是“清洗顺序和次数不同;食堂布局不合理,设施设备简陋不配套;制度不全,个别人员卫生素质和行为较差。针对存在问题提出了加强卫生监督,健全卫生制度;加强卫生宣传,完善卫生设施;提高专业技能,稳定炊事员队伍,搞好食堂卫生等三项建议
