用萝卜叶生产的绿色粉末色素,具有天然色素的特点,含有叶绿素特有的绿藻味和鲜明的绿色,去取了萝卜叶的涩味和苦味,可广泛适用于食品工业。其生产过程过下: 1、原料及处理。选择新鲜绿色的萝卡叶,除去腐质,干枯的黄叶,漂洗干净后沥干。 2、浸泡。配制1%氯化钠加1%小苏打混合液。将洗净沥干的萝卜叶,加入浸泡液中,并用竹垫压住萝卡,使萝卡叶全部浸泡于溶液中,并用竹垫压住萝卜叶,使萝卜叶全部浸泡于溶液中。 3、冷冻。将浸泡的萝卜叶送入冷冻室,在-25℃—30℃温度下冷冻5-6小时。
