本试验以鸭梨果皮为试材,研究其褐变过程中细胞膜透性及超氧物歧化酶(SOD)和过氧化氢酶(CAT)等自由基清除酶的变化规律,试验结果表明,随着果皮褐变程度的加深,果皮细胞相对电导率显著增大,上述两种酶的活性明显降低,同时,褐变果皮中膜质过氧化产物丙二醛(MDA)含量也显著增加,试验认为自由基对细胞膜的伤害和有关清除酶系统的保护作用削弱是造成鸭梨果皮褐变的重要因素。
In this experiment, pear peel was used to study the changes of cell membrane permeability and the activities of superoxide dismutase (SOD), catalase (CAT) and other free radical scavengers during browning. The results showed that With the deepening of pericarp browning, the relative conductivity of pericarp cells increased significantly, and the activities of the above two enzymes decreased significantly. At the same time, malondialdehyde (MDA) content in pericarp of pericarp increased significantly. The damage of free radicals to the cell membrane and the weakening of the protective effect on the scavenging enzyme system are the important factors that cause browning of pear peel.
