[目的]对川鲶、细鳞斜颌鲴、丁鱼岁3种优质淡水养殖鱼类的含肉率、肥满度及肌肉的营养价值进行了综合评价,为其推广养殖提供理论依据。[方法]采用常规的生化分析方法对3种优质淡水鱼类的营养组成进行了测定。[结果]3种鱼类的含肉率大小依次为:川鲶(68.47%)>细鳞斜颌鲴(67.12%)>丁鱼岁(64.04%),川鲶与丁鱼岁含肉率差异显著(P<0.05);肥满度大小依次为:丁鱼岁(2.33)>细鳞斜颌鲴(1.56)>川鲶(0.86)。川鲶、细鳞斜颌鲴、丁鱼岁的蛋白质含量(占鲜样)分别为17.49%、17.56%、17.19%;脂肪含量(占鲜样)分别为4.63%、1.97%、1.69%。[结论]3种鱼含肉率比大宗养殖淡水鱼类的含肉率高,肌肉中蛋白质含量也比较高,综合评价川鲶、细鳞斜颌鲴、丁鱼岁的营养价值较高,有较好的经济性状和生产性能。
[Objective] The research aimed to evaluate the meat content, fatness and muscle nutritional value of three high quality freshwater cultured fishes of Chuanchus catfish, Fagaceae obliquus and Lactarius, providing a theoretical basis for their promotion. [Method] The nutrient compositions of 3 high quality freshwater fish were determined by routine biochemical analysis. [Result] The results showed that the meat content of three species of fish were as follows: Sichuan catfish (68.47%), Scylla serrata (67.12%), Chinese anchovy age (64.04%), (P <0.05). The degrees of fatness were as follows: larvae (2.33)> Scylla serrata (1.56)> Chuan (0.86). The protein content (accounting for fresh samples) of Sichuan catfish, Scylla serrata, and Chinese anchovy were 17.49%, 17.56% and 17.19%, respectively. The fat content accounted for 4.63%, 1.97% and 1.69% respectively. [Conclusion] The meat content of three kinds of fish was higher than that of freshwater fish in bulk farming, and the content of protein in muscle was relatively high.
