目的:了解学校食堂卫生安全现状,找出目前学校食堂存在的问题,研究在新形势下如何管好学校食堂。方法:对梁平县部分小学的食堂采取现场查看和询问的方法进行了调查,结果被查学校都有卫生许可证,从业人员皆持健康证上岗,但是一些学校食堂基础设施差,管理不到位,从业人员普遍素质低下,存在安全风险。结论:小学食堂卫生安全状况不容乐观,食堂管理还存在诸多问题和漏洞。食堂管理应从转变观念开始,从制度落实开始,从严格的操作规程和科学的营养供餐开始。只有不断创新管理,才能降低食品安全风险,保证学生健康成长。
Objective: To understand the status quo of school canteen health and safety, to find out the existing problems of school canteens, to study how to manage school canteens in the new situation. Methods: Some of the canteens in some primary schools in Liangping County were surveyed and questioned on the spot. As a result, all the schools examined had health permits, and all the employees took the health certificates. However, some schools had poor canteens’ infrastructure and inadequate management, Practitioners generally low quality, there are security risks. Conclusion: The hygienic and safe condition of primary school canteens is not optimistic. There are still many problems and loopholes in the management of canteens. Canteen management should start from the concept of change, starting from the implementation of the system, starting from the strict operating procedures and scientific nutrition feeding. Only by continuous innovation management can we reduce the risk of food safety and ensure the healthy growth of students.
