The contents of fatty acids and trans fatty acids (TFAs) in 167 foods from 52 well-known brands sold in the Chinese market from 2005 to 2009 were determined by a combination of gas chromatography and infrared spectroscopy. Test results showed that 87% of the foods tested contained trans fatty acids. Among them, creams, wafers, cakes, and foodstuffs were classified as foods with high levels of trans-fatty acids (TFAs). “Western fast food ” package, trans fatty acids (TFAs) content of 1.00 ~ 2.00g each. Many food labels, including “FAST FOOD”, have serious flaws in the labeling of fat content. There is no uniform standard for the labeling of processed foods with respect to the names of the labeled “partially hydrogenated oils” and trans-fatty acids (TFAs).
