目的通过对湖州市吴兴区织里镇从事农村家庭宴席制作的土厨师团队成员,进行食品安全认知、行为态度和需求情况调查,探讨农村土厨师食品卫生安全知识培训管理对策。方法统一制订调查表,采用面对面访谈,对其食品安全知识认知、行为态度和需求进行调查并对结果进行分析。结果对从事农村家庭宴席要遵守什么法律、从业人员患病毒性肝炎是否调离和从业人员是否勤剪指甲、勤理发的正确率分别为90.4%、85.6%和71.2%,其他各项调查内容正确率均<70%。结论开展《食品安全法》及相关法律知识、卫生知识的培训、教育,使农村土厨师团队成员学法懂法,提高农村家庭宴席自律水平,加强引导和监督管理,全面增强食品卫生安全意识,促使农村土厨师切实履行食品卫生安全第一责任人。
Objective To investigate the food safety awareness, behavior attitude and demand of local chef team members engaged in banquet production in rural families in Zhili Town, Wuxing District, Huzhou City, so as to discuss the management countermeasures of rural chef food hygiene and safety knowledge training. Methods The questionnaire was formulated uniformly. Face-to-face interviews were conducted to investigate the food safety knowledge, attitude and needs, and to analyze the results. Results The correct rates of 90.4%, 85.6% and 71.2% for the regulations of the rural families engaged in banquets in rural areas, whether or not the employees were infected with viral hepatitis and whether the employees were regularly fingernails or not, the correctness of other investigations Rate <70%. Conclusion Carrying out training and education on “Food Safety Law” and related legal knowledge and hygiene knowledge so that rural soil chef team members learn the law and raise the level of self-regulation of family banquet in rural families, strengthen guidance and supervision and management, and comprehensively enhance food hygiene and safety awareness, Promote rural soil chef effective implementation of food hygiene and safety first person in charge.
