为了研究林蛙油抗氧化性组分,制备了林蛙油粉、林蛙油水溶性蛋白、林蛙油非水溶性成分,并对它们的抗氧化能力进行了对比,测定了3种样品的羟基自由基清除率、超氧阴离子清除率、DPPH·自由基清除率。实验发现,林蛙油水溶性蛋白具有良好的抗氧化能力,同等浓度下,林蛙油水溶性蛋白的抗氧化能力最强,在10 mg/mL时羟基自由基清除率、超氧阴离子清除率、DPPH·清除率分别为45%、37%、71%。为了达到更易被人体吸收和利用的效果,分别用木瓜蛋白酶、中性蛋白酶、碱性蛋白酶制备了水溶性蛋白抗氧化肽,发现利用中性蛋白酶酶解后的水溶性蛋白抗氧化性明显得到优化,在10 mg/mL时羟基自由基清除率、超氧阴离子清除率、DPPH·清除率分别提高到60%、45%、82%。
