Hygiene supervision and control over the manufacturing plants supplying flight food, the cabin service department of Air China and food supply on aircraft have been implemented by the Beijing Airport Health and Quarantine Bureau. Fifty—three specific problems of various kinds have been detected in a 12 month experimental period from August of 1991 to August of 1992. This paper has discussed the legal basis, supervision unit, work procedures and work content of supervision and control over air catering.
