提起戊戌变法烈士谭嗣同对张氏卤菜的酷爱,首先要讲讲张氏卤菜源远流长的来历。明嘉靖年间(1522-1566),湖南浏阳北盛镇的张氏先祖以善制卤菜起家,其独创的名牌卤菜“寸肤”(以猪皮或猪头肉为底料)更是名扬四方,被文人墨客誉为佐酒的王牌菜。当时浏阳举人周中信的《浪淘沙·巨湖烟雨》一词中,有“寸肤饮酒就轻寒”之句,对其大加赞赏。浏阳文庙慕名礼聘张氏先祖
