由国际食品科学技术联盟(IUoFST)主办的第十一届世界食品科技大会于2001年4月23-28日在韩国汉城举行。来自世界五十八个国家和地区的食品科学家、工程师、教育工作者、企业家、政府官员等共1942人注册参加了会议。大会宣读论文涉及地方特产食品;食品加工;食品工程;生物技术;亚洲调味品和香辛料;食品质量检测和评价;食品照射;大豆食品;营养;亚洲发酵技术;预警微生物学;食品脂质和健康食品等专题。我们将陆续选登此次会议的论文的题目。本期刊登的论文专题在:P.14,P.23,P.33,P.56,P.67。
The 11th World Food Science and Technology Conference organized by the International Union of Food Science and Technology (IUoFST) was held in Seoul, Korea from April 23 to 28, 2001. A total of 1942 food scientists, engineers, educators, entrepreneurs, government officials from 58 countries and regions in the world registered for the conference. The conference read papers on local specialty foods; food processing; food engineering; biotechnology; Asian condiments and spices; food quality testing and evaluation; food irradiation; soy food; nutrition; Asian fermentation technology; early warning microbiology; food lipids and health Food and other topics.
