研究了磁场对有机溶剂中脂肪酶催化活性的影响。磁化溶剂、底物溶液、均能影响脂肪酶的酯合成活力,磁化溶剂对脂肪酶的酯合成活力影响最大0.216T的磁场可使酶的酯合成活力由24.8nm ol/m in.m gPr提高到39.7nm ol/m in.m gPr.水活度较低时,磁场对酶的酯合成活力影响较小,但酶的催化活性较高,随水活度增大,酶的酯合成活力减小,但磁场的影响增大,当水活度增达到0.86时,磁场可使酶的酯合成活力成倍增加。0.09T、0.475T的磁场使酶的最佳水活度aw值减小为0.31,磁场显著影响脂肪酶催化酯合成反应的初速度。
The effect of magnetic field on the catalytic activity of lipase in organic solvents was investigated.
