毛竹笋热泵干燥特性及制品复重率

利用热泵装置干燥毛竹笋 ,探讨干燥温度、切分厚度及干燥前预处理对干燥特性及制品复重率的影响 .结果表明 ,切分厚度薄且经漂烫 ,干燥温度高的毛竹笋干燥速度快 ,制品感官质量好 ;切分厚度薄且未经漂烫 ,干燥温度高的制品复重率高 .用 Logistic曲线拟合毛竹笋含水率随干燥时间变化的状态分布 ,幂函数拟合制品复重率的状态分布 ,决定系数 r2 分别达 0 .972 5和 0 .961 0以上 The effects of drying temperature, cutting thickness and pretreatment before drying on the drying characteristics and product re-rate were investigated by using a heat pump device.The results showed that the drying speed of bamboo shoots with thin thickness and high drying temperature The sensory quality of the product is good, the thickness of the sliced ​​product is high, and the weight of the product with high drying temperature is high.
