目的了解城厢区餐饮业餐具卫生消毒状况,为卫生监督管理提供依据。方法每年1次现场随机抽取辖区餐饮业内餐具,按GB 14934-1994《食(饮)具消毒卫生标准》规定的大肠菌群快速检测纸片法进行采样检测。结果 2008—2012年共抽检餐具13 307份,总合格率78.2%,5年合格率呈逐年上升趋势,以2012年上升幅度最大,合格率达96.4%;大型餐饮业餐具消毒合格率最高(93.7%),中型餐饮业次之(82.7%),小型餐饮业最低(72.9%)。结论小型餐饮业餐具及大型餐饮业的大餐具消毒合格率最低,尚存在不安全隐患,是今后监督监测的重点。
Objective To understand the hygiene and disinfection status of tableware in Chengxiang District and provide the basis for health supervision and management. Methods The tableware of the catering industry in the area was sampled on a random basis once a year. Sampling and testing were performed according to the method of rapid detection of coliform bacteria stipulated in GB 14934-1994 (Sanitary Standard for Food and Beverage Sterilization). Results A total of 13 307 tableware samples were obtained from 2008 to 2012, with a total pass rate of 78.2%. The five-year compliance rate showed an upward trend year by year, with the highest rate of 96.4% in 2012; the highest rate of tableware disinfection was in large-scale catering industry (93.7% %), Medium-sized catering industry (82.7%) and small-scale catering industry (72.9%). Conclusion Small tableware and catering industry in the small tableware disinfection pass rate is the lowest, there are still unsafe hidden dangers, is the focus of supervision and monitoring in the future.
